Satisfying your sweet tooth​

Crisp, golden desserts are not going to happen in your multicooker. Instead, as cookbook author Jessie Sheehan wrote for us, focus on items that benefit from cooking with steam: “The Instant Pot excels at ‘baking up’ luscious, custards and puddings, cakes with a dense, moist crumb; think sticky toffee pudding or dense ‘snacking cakes’ (since the IP only ‘bakes’ a single layer of cake at a time anyway, it is perfect for snack cake-making), crème brûlée, rice pudding, flan, clafoutis, chocolate pots de crème, lemon pudding cake, and … cheesecake and bread pudding.” As she points out, desserts contained in a 7-inch cake pan work well, as do those you can make in individual ramekins.

Does dulce de leche eaten with a spoon count as dessert? In my book, it does. Homemade dulce de leche is within easy reach with the Instant Pot. See the instructions in Alfajores (Cornstarch Cookies With Dulce de Leche).

Chinese food:​



Hot & Sour Soup is the Chinese version of vegetable soup with a major kick of some, well, hot & sour. This one is a true "dump & go" made with all accessbile ingredients, yet with full-on authentic flavor. Get ready to have your sinuses cleared!



Ingredients​

  • 4 cups chicken broth
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon white pepper (if you don’t want a little zest to it, leave it out)
  • 1 teaspoon seasoned salt
  • 1/2 – 1 teaspoon sesame oil
  • 3 strands of scallions, divided (2 for the soup, 1 for garnish) and chopped
  • 1/4 teaspoon turmeric (this really just enhances the color)
  • 2 tablespoons of cornstarch + 2 tablespoons water, mixed together to form a slurry
  • 2 large eggs + 2 egg whites, beaten
  • Chinese noodles, for topping (optional)
